Kale Chips with Cashews


I found this recipe the other day and just had to try it.  I've made kale chips many times now and am always trying to think of new ways to change them up.  
I didn't do much to change it other than using roasted red peppers instead of raw, adding some cayenne pepper and Celtic sea salt.  I also cooked mine in a low oven as I wanted them done quickly.  So I guess I really did change the recipe quite a bit :-)
These aren't raw, but they're still fairly healthy and they're so delicious! 
Here's what I did...


Soaked some raw cashews for a few hours.  Drained and put into the blender.  Blended until they were quite pasty.

 Added some roasted red peppers and blended those with the cashews.

 Added lemon juice, sea salt, cayenne and nutritional yeast and blended some more.

 Mixed washed, dried and torn kale leaves with the cashew mixture until well-coated.  Spread on cookie sheets and baked in a 255F oven for about 30 mins.  Turned them over and baked another 20 mins.  

 Yum yum!!!
